ooey-gooey brown sugar oatmeal cookies.


I made these wonderful cookies awhile ago and I loved them so much I figured I would let you all know about them! 

These cookies are called ooey-gooey brown sugar oatmeal cookies, and they are DELISH.

Here's what you are going to need, my loves. 


1.     1 cup softened butter
2.     1 ¼ cup brown sugar
3.     ¾ cup sugar
4.     2 tsp vanilla extract
5.     2 eggs
6.     1 tsp baking soda
7.     1 tsp baking powder
8.     ½ tsp salt
9.     2 ¼ cups all purpose flour
10. 1 cup quick cooking oats
11. 1 ½ cup coconut 


And here's how you're going to do it. 



1.   First we need to make sure to preheat the oven to 350 degrees.
2.     Then we are going to cream together the 1 cup softened butter, 1 ¼ cup brown sugar, and ¾ cup of sugar.
3.    Add one egg and mix it in until it is fully incorporated into the butter and sugars.
4.   Add the second egg, and the 2tsp vanilla and mix until everything is evenly incorporated.
5.  Add the baking soda, baking powder and salt and continue to mix until the ingredients are all well-distributed.
6.   Add about ½ of your flour and mix until the flour is thoroughly incorporated.
7.   Add the oats as well as the coconut if you choose to use it and mix until they are evenly distributed in the mixture.
8.    Roll the dough into balls that are about 1.25 inches across.
9. Place the dough balls on a baking sheet lined with parchment paper and leave about 2 inches between each cookie.
10.   Bake for 8-10 minutes just until the edges are light brown.
11.   After taking the cookies out of the oven let them cook on the baking sheet for about 5 minutes. Then move them to a cooking rack.

mug cookie recipe.



Do you have that craving for a warm, gooey, chocolate-chippy cookie right now? You know, the kind that comes right out of the oven, and when you pull it apart you can see the chocolate ooze out of it. The kind of cookie that slowly melts in your mouth? 

How would you like to have that cookie in 50 seconds? 

Well...look at that. By the time you read this post you will have a cookie made. Perfect! 

Lets get started. 



First! Melt a tablespoon of butter in the mug of your choice. 


Secondly, add one table spoon of white sugar, one table spoon of brown sugar, a pinch of salt, and a 'lil vanilla. 


Add and egg yolk and mix it up with a fork until it is smooth. 


Add 1/4 cup of flour.


Mix it until it looks like...well...cookie dough.


Add some chocolate chips, or white-chocolate chips, or butterscotch...whatever you heart desires.


Mix it again.


Microwave it for 40-50 seconds. 


And wa-lah! You made a cookie in a mug. :)



Now, grab a tall glass of milk and enjoy.

recipe: rainbow jar cake.


Okay guys, it was Erika's birthday the other day and I decided I would make her a yummy cake. 
And what makes a yummy cake even better? A rainbow, yummy cake. 
And what makes a rainbow, yummy cake better?
A rainbow, yummy cake in a jar. 

That's right, a rainbow jar cake. Better believe it.

It turned out wonderfully and she loved it. So since it was such a hit and it is so freakin' cute I decided I would give you guys the recipe. So here ya go! 



Ingrediants

  • 1 Betty Crocker Super Moist white cake mix
  • 1 Tub Betty Crocker Whipped Ready to Spread white frosting
  • 3 egg whites (for cake mix)
  • 1/3 cup vegetable oil (for cake mix)
  • 1 1/4 cup water (for cake mix)
  • Betty Crocker NEON food colors in neon pink, neon blue and neon purple
  • Regular food colors in yellow, green, red and blue
  • 4 (1-quart) jars. ( I used one jar and used the rest of the batter in a bread pan, though.)
  • Non-stick cooking spray





Directions


1: Preheat your oven to 350 degrees.
2: Make the cake batter according to the jar.
3: Divide the batter into 5 bowls.


4: Add your selected colors!



5: Then pour about a forth of a cup of each color batter in layers in the jar. (Make sure to spray it with cooking spray before hand though!)
6: Place the jars in a glass pan that is filled with 1/4 inch of water.
7: Bake for 45-50 minutes. (When the cakes are done they should spring back to the touch)


8: Let it cool completely, then add icing and pretty sprinkles! 



And there you have it! So cute, right? (But make sure to wipe off the batter inside the jar, I kind of forgot, but it still turned out cute!)

long time, no blog.

Hey, hey, heyyy.

It's me again! I apologize for the lack of blog posts from me recently. The lazy bug has bitten me. :/

BUT - I am back and planning on getting back to blogging regularly. :) And I don't know if you guys have noticed but... 2 'till 200 followers! Thank you guys so much! It just makes my day to know that I have people interested in what I write. :) I would totally do a giveaway or something but...I'm not entirely sure how to send out things. I'll figure that out sometime soon hopefully. I need to show the love, right?

But anyway, onto the post. Here is what I have been doing the past couple of days. And beware, this post is going to be verrry picture heavy.  :)




Today we went to Michocana's. It is a place where they sell Mexican palletas. Which are kind of like obscure popsicle ice cream treats. :)



They had every flavor from chocolate to mango and hot pepper. AND - they are all wonderful.




Mo here ended up getting the pineapple. Now, this actually had fresh pineapple chunks in them. Awesome? Yes.




Kyle here just got lame 'ol lime. But it is his favorite, he gets it every time, so it must be pretty good. :)




Here is mine, I had pistachio raisin. It. Was. Awesome. It fell off it's stick, though. :/




They have a bunch of different flavors of ice cream too! :)




And here is what my cousin and I ended up making. Homemade cinnamon sugar pretzels. :)
Yum.
